At Home Meximelts
At home Meximelts is a TexMex favorite in my household. They are very easy to make and are twist on soft tacos. These are perfect when you get home late and are craving Mexican food. You could also make the taco meat ahead of time and then assemble the Meximelts when you are ready throughout the week. Once the meat is made, this meal choice is ready in 10 minutes or less.
Meximelts are like tacos but have melted cheese and Pico de Gallo. They are always made with soft tacos, also known as flour tortillas. They are a good grab and go option if you wrap them in foil since all the ingredients stay in the taco once the cheese is melted. Give it a try and let me know how you like it.

Supplies
- Frying Pan
- Griddle Skillet
- Cooking Spoon
- Strainer (for ground beef)
Ingredients For Meximelts
- 1 pound of ground beef or ground turkey
- 1 envelope of taco seasoning
- 8-10 ounces of Pico de Gallo
- 2 cups of shredded Mexican cheese blend or 1 cup shredded Pepperjack cheese and 1 cup of Cheddar or Colby shredded cheese
- 1 package for refrigerated flour tortillas or regular on the shelf tortillas (8-12 count)

Directions For Meximelts
- In a frying pan, brown ground beef or ground turkey. If you use ground beef, drain the excess oil with a strainer and return meat to pan.
- Next, add the taco seasoning cook as per package directions.
- Warm up tortillas on griddle pan and set to the side.
- Next, build the Meximelt by adding a little cheese, then meat, Pico de Gallo and then more cheese.
- Fold the tortilla in half and make sure you do not over stuff.
- On a microwave safe plate, wrap Meximelt in a paper towel and place 2 on a plate.
- Then microwave on high for 1 minute or until cheese is melted.
- Serve with your favorite sides or with guacamole or sour cream. Enjoy!
