Breakfast Kolaches
Breakfast Kolaches are a breakfast favorite! That is because you can stuff them with anything you like and tailor them to family and guests. These are so easy to make by using dinner rolls to simplify the process.
You can stuff these breakfast kolaches with ham, bacon, sausages, mushrooms, spinach, bell peppers, jalapenos, pepperoni pizza, philly cheesesteak, artichokes, pot roast, etc. So the possibilities are endless!
I like to make a good batch and make some with ham, egg and cheese, spinach, egg and cheese, combinations of meats, veggies, egg and cheese, etc. Sometimes I chop up link sausage to add in the filing. These are so much fun.
These breakfast kolaches can also me made ahead and frozen. Just don’t bake them until ready to eat. Quick freeze on a plate until firm (about 45 minutes) and then transfer to labeled freezer bags. They can freeze for up to 3 months.

Ingredients For Breakfast Kolaches
- 1 package of Rhodes Yeast Dinner Rolls (found in the frozen section) – thawed but still cold
- 7 large eggs
- 1/2 cup of cooked bacon pieces – chopped into small pieces
- 1/2 cup of browned ground sausage
- 3 Tablespoons of finely chopped jalapenos
- 2 Tablespoons of finely chopped green onion
- 1 cup of shredded cheddar cheese
- 2 Tablespoons of butter
- Flour for rolling the rolls
- Cooking spray
- 1/4 cup of water for securing the dinner rolls, once wrapped
Note:Â You can use other fillings, just chop them well.Â
Supplies
- Frying pan
- Spatula or mixing spoon
- Rolling pin
- Cutting board
- Sharp knife
- Baking sheet
- Pastry brush
- Small bowl
Directions For Breakfast Kolaches
- Start by thawing out the dinner rolls on a plate. Take out 15 dinner rolls and allow to thaw about 30-40 minutes. So the dough should be workable and cold.
- Brown the sausage until cooked. The color will change from pink to brown and then drain on paper towels.
- Next, cook the bacon until done and drain on paper towels.
- In the meantime, pre-heat the oven to 375 degrees Fahrenheit.
- Spray the baking sheet with cooking spray.
- Then chop up the green onions and Jalapenos.
- Sprinkle the work surface and rolling pin with flour.
- Next, in a medium skillet, scramble the eggs, cooked meats, green onion, jalapenos and cheese until almost cooked but no runny. Cook on low heat so the eggs cook evenly. So quickly remove the pan to stop the cooking process.
- Then roll out the dough into 5-6 inch circles and then place 2-3 Tablespoons of mixture in the center.
- Now fold over the dough and press, securing the sides by using some water. Continue until you filled all of the dinner rolls and place sealed side down on the baking sheet.
- Bake the breakfast kolaches at 375 degrees for 18-20 minutes or until the tops are light golden brown. So if you froze these before baking, bake an extra 5-10 minutes, since going from freezer to oven.
- Once done, brush melted butter on the top of the breakfast kolaches. Now, they are ready to serve!
- You can serve the breakfast kolaches with your favorite dipping sauces like breakfast gravy, salsa/picante, avocado cream sauce, cheese sauce or pasta sauce. The sauce will depend on the type of kolache you made.
