Chimichurri Sauce
Chimichurri sauce is a tangy sauce that tastes great on Mexican food. It is the perfect blend of citrus, spices, cilantro, and parsley. So the sauce is very refreshing. It is a perfect accent sauce over Mexican dishes with cheese or cheese sauces.
My favorite way to enjoy the sauce is over loaded nachos or a burrito with a cheese sauce. This sauce is pretty easy to make and is made in the blender or food processor. So give this a try, and discover the many dishes that you can try it on.

Ingredients
- 1 bunch of flat leaf parsley (about 1 cup) – pulled from stems
- 1/2 bunch of fresh cilantro (about 1/2 cup) – pulled from stems
- 3 garlic cloves (finely chopped) or 3 teaspoons of minced garlic
- 4 stems of green onions, finely chopped
- 1/2 cup of olive oil
- 2 Tablespoons of red wine vinegar
- 2 teaspoons of lime juice or lemon juice
- 1/2 teaspoon of salt
- 1/2 teaspoon of red pepper flakes
- 1/4 cup of water
Supplies
- Blender or food processor
- Measuring cup
- Measuring spoons
- Air tight container
Directions For Chimichurri Sauce
- Place all ingredients into a blender or food processor and blend on high until ingredients bread down into a sauce.
- Serve over nachos, taquitos, fajitas, burritos, or enchiladas.
- Left over sauce can be stored for a week in an air tight container.
