Roasted Garlic Hummus

Roasted Garlic Hummus is delicious and good for you. Â When you make your own hummus, you know exactly what is going into your food. Â This hummus is creamy and the roasted garlic makes the flavor deep. Â Serve with your favorite veggies, pita chips, bread or put on wraps or sandwiches. Â I like to serve with snow peas as a great alternative to chips. Â Give it a try and let me know how it goes!

Ingredients
- 29 oz of can Chick Peas (Garbanzos) – I use Goya
- 2-4 heads of garlic (use more heads if the garlic is small)
- Juice from 2 fresh squeezed lemons
- 1 1/2 teaspoons of salt
- 1/2 cup of chopped fresh parsley
- Olive oil
- 2 Tablespoons of tahini (optional if you want a rustic/nutty flavor)
- 1/2 cup water or water from chick peas

Directions For Roasted Garlic Hummus
- Bring cold water to a boil and cook the chickpeas for 15 minutes and then drain and rinse in cold water. Â Then separate the skins from the chickpeas for a creamier hummus. Â This takes about 30 minutes.


- Pre-heat oven to 450 degrees Fahrenheit.
- Cut the top off the garlic and place in a foil lined pan. Â Then roast in the oven for 20 minutes.

- Next, in a food processor, add the chickpeas, Tahini, salt, lemon juice, water, and parsley and pulse until well blended.

- The roasted garlic hummus is ready to serve or chill for 1 hour. Â Store the hummus in an air tight container in the refridgerator for up to a week.
