Roasted Garlic Hummus

Roasted Garlic Hummus is delicious and good for you.  When you make your own hummus, you know exactly what is going into your food.  This hummus is creamy and the roasted garlic makes the flavor deep.  Serve with your favorite veggies, pita chips, bread or put on wraps or sandwiches.  I like to serve with snow peas as a great alternative to chips.  Give it a try and let me know how it goes!

Ingredients

  • 29 oz of can Chick Peas (Garbanzos) – I use Goya
  • 2-4 heads of garlic (use more heads if the garlic is small)
  • Juice from 2 fresh squeezed lemons
  • 1 1/2 teaspoons of salt
  • 1/2 cup of chopped fresh parsley
  • Olive oil
  • 2 Tablespoons of tahini (optional if you want a rustic/nutty flavor)
  • 1/2 cup water or water from chick peas

Directions For Roasted Garlic Hummus

  • Bring cold water to a boil and cook the chickpeas for 15 minutes and then drain and rinse in cold water.  Then separate the skins from the chickpeas for a creamier hummus.  This takes about 30 minutes.

  • Pre-heat oven to 450 degrees Fahrenheit.
  • Cut the top off the garlic and place in a foil lined pan.  Then roast in the oven for 20 minutes.

  • Next, in a food processor, add the chickpeas, Tahini, salt, lemon juice, water, and parsley and pulse until well blended.

Roasted Garlic Hummus

  • The roasted garlic hummus is ready to serve or chill for 1 hour.  Store the hummus in an air tight container in the refridgerator for up to a week.
