Berry Cheesecake Chessman Cups
Making Berry Cheesecake Chessman Cups are easy and they taste delicious. This is a no bake recipe that you will receive plenty of compliments for making. It is the perfect serving to satisfy the sweet tooth. It calls for using mascarpone cheese, so it is lighter and fluffier than regular cream cheese. I also love that the chessman cookies give it a lovely buttery taste and crunch in every bite.
You can use any type of berry for this dessert. I have made it with raspberries and strawberries, but you could also use blueberries or blackberries to achieve a great dessert. So, depending on how much fruit you like in a dessert, you can also add 2 layers of fruit sauce instead of one. Also, this recipe uses frozen fruit, but I am sure you could use fresh as well.

Ingredients
Makes 12-14 – 4-6 ounce Berry Cheesecake Chessman Cups
- 2- 8 oz blocks of cream cheese (226g) – softened to room temperature
- 2 – 8 oz containers of mascarpone cheese
- 4 teaspoons of unflavored gelatin
- 1/4 cup of powdered sugar
- 1/2 cup of granulated sugar
- 1 Tablespoons of vanilla extract
- 2 1/2 cups of heavy cream
- 3 Packages of Chessman Cookies (Pepperidge Farm’s or something similar)
- 2 – 12 ounce bags of frozen berry fruit of choice (strawberries, raspberries, blueberries)
- 1 cup of granulated sugar

Supplies
- 4-6 ounce plastic disposable wine glasses
- Small 4 inch party spoons
- Mixing Bowls
- Spatula or spoon
- Mallet
- Measuring cups and spoons
- Hand mixer
- Saucepan
- Strainer
Directions For Berry Cheesecake Chessman Cups
- Start by combining the frozen fruit of choice, and 1 cup of granulated sugar in a large saucepan on medium-high heat. Then allow it to boil for 5-7 minutes while stirring regularly.
- Then take a large bowl and place a strainer on top of it. Add in the fruit mixture and press down the mixture with a large spoon, so the liquid drains into the bowl. Now, set to the side.
- Set up your dessert cups or wine glasses.
- Next, in a deep mixing bowl, combine the cream cheese, mascarpone, unflavored gelatin, granulated sugar, powdered sugar, and vanilla extract.
- Then mix on medium speed for 1 minute or until smooth.
- Next, add in the heavy cream and mix until stiff.
- In a large gallon storage or freezer bag, add 2 bags of the Chessman cookies and crush with a kitchen mallet (smooth side).
- Now add a small amount of crushed cookies in each of the bottoms of the wine/dessert cups.
- Then, pipe or spoon a 1/4 layer of the cup with cream cheese mixture. Piping the mixture will give a more professional look.
- Next, pipe or spoon a layer of fruit mixture.
- Then add a small amount of crushed cookies in the center of the cup.
- Add another layer of the cream cheese mixture and spread to cover all the berry syrup.
- Now add some crushed cookies on the top and a whole chessman cookie.
- Then refrigerate for at least 2-3 hours and you can make this the day before. So when I make this the day before, I do not add the whole cookie until ready to serve, that way they fit in the fridge in a container. Enjoy!
