Broccoli Cheese Balls

Broccoli Cheese Balls are a great way to serve broccoli and cheese.  Kids also love these too!  They make a wonderful food presentation for date night too.  These broccoli cheese balls are light and crispy on the outside and loaded with flavor and cheese on the inside.  So this recipe is great as an appetizer or side.

Ingredients

Recipe makes between 20-24 Broccoli Cheese Balls

  • 4 cups of cooked fresh broccoli florets – roughly chopped
  • 4 eggs – divided – 2 eggs lightly beaten for broccoli mix and 2 eggs lightly beaten for flour step
  • 1 small onion – finely chopped
  • 1/2 cup All Purpose Flour
  • 1 cup of Panko bread crumbs
  • 1 1/4 cup of plain of plain bread crumbs
  • 2 cups of shredded mozzarella cheese
  • 2 cups of shredded cheddar cheese
  • 6 ounces of Velveeta cheese – cut into small pieces
  • 1/2 teaspoon of garlic salt
  • 2 teaspoons of coarse black pepper
  • 3/4 cup of grated parmesan cheese
  • Vegetable or Canola oil for frying

 

Supplies

  • Stock pot
  • Strainer
  • Mini chopper
  • Sharp knife
  • Cutting board
  • Mixing bowls
  • Measuring cups
  • Measuring spoons
  • Large frying pan or deep fryer

 

Directions For Broccoli Cheese Balls

  • Rinse off broccoli and drain on paper towels.  Then roughly chop into large pieces.

  • Then steam broccoli in a stock pot until the broccoli is slightly softened but not mushy.  So it should steam for about 10 minutes.  Then drain in a strainer and allow to cool.

  • Next, finely chop onion.
  • Then once the broccoli is cooled, chop into smaller pieces.

  • Next, add in the shredded cheeses, Velveeta cheese, garlic salt, pepper, finely chopped onion, 1 cup of panko bread crumbs, 2 eggs, and gently stir in large bowl with the broccoli.

  • Then form into 2 inch balls with your hands and refrigerate for at least 1 hour.

  • Place about 2-3 inches on oil into a frying pan or deep fryer.  Then pre-heat the frying pan or deep fryer to medium high heat (around 360-375 degrees Fahrenheit).
  • Then get three bowls and add the flour to one bowl, plain bread crumbs to another bowl and mix the eggs in another bowl.  You can also use panko bread crumbs if you don’t have plain.
  • Next dip the cheese balls in the egg mixture (2 eggs with 1 Tablespoon of water), then roll the broccoli cheese balls around in the flour.  Then the plain bread crumbs in another bowl.

  • Now, place a single layer of dredged broccoli cheese balls into the fryer and cook until golden brown on all sides.  This is only for a few minutes.  So be sure not to overload the fryer or place broccoli cheese balls on top of each other or they will not cook correctly and will stick together.  Then drain on paper towels and serve while warm.  Stove left overs in a sealed container.

  • So to re-heat, place in a baking tray in a cold oven and heat to 300 degrees Fahrenheit.
