Catfish Nuggets
Catfish Nuggets are super easy to make and taste delicious. Â The secret to good fried catfish is two things, keeping the inside moist and flaky, as well as using small to medium sized fillets. Â So the larger the catfish, the fishier it will taste. Â Some stores sell the catfish nuggets in packages that make it even easier. Â The way to make catfish nuggets moist is to marinate them. Â Another important tip is to make sure your oil is hot enough to fry.
Many people like spicy catfish nuggets and even add additional hot sauce on the nuggets. Â These are great for lunch and dinner. Â Catfish nuggets taste great for any season.

Ingredients
- 2.5 lbs of Catfish Nuggets – you can also purchase catfish fillets and ask the market to cut them into nuggets or cut with kitchen shears at home
- 1 can evaporated milk
- 3/4 – 1 cup of hot sauce (pick your favorite and degree of hotness)
- 1 1/2 Tablespoons of cayenne pepper and another teaspoon for the flour mixture
- 1 1/2 Tablespoons of garlic powder or granulated garlic and another Tablespoon for the flour mixture
- 2 teaspoons of garlic salt
- 3 large eggs
- 5 cups of all purpose flour
- 2 Tablespoons of parsley flakes
- Vegetable oil for frying

Directions For Catfish Nuggets
- Rinse all the catfish in cold water and feel for any fins or forgotten bones and remove them. Â Then place the catfish in a large container that has a lid that you will use later. Â Then add the cayenne pepper, granulated garlic or garlic power, garlic salt, and mix with your hands. Â Next pour the evaporated milk and hot sauce and mix with your hands again. Â Then put the lid on the container and marinate for at least 2 hours or overnight.
- After the catfish nuggets are marinated, add the eggs to a small bowl and beat with a fork. Â Then add the eggs to the marinated catfish.
- Next, make the flour mixture. Â In another large bowl, add the flour, granulated garlic or garlic powder, parsley flakes, cayenne pepper, and mix with a fork.
- Then add pieces of the catfish nuggets to the flour mixture and coat the catfish. Â Then move the coated pieces to another plate or bowl, while you coat more.
- Add enough oil to a deep frying pan so that it is almost half way filled. Â Then heat the oil on high heat to deep fry around 350 degrees Fahrenheit. Â Next, add the catfish nuggets to the pan in a single layer and cook to golden brown on both sides. Â Do not overfill the pan with nuggets or the nuggets will be soggy. Â Frying time should only be a few minutes on each side and cook in batches. Â Catfish nuggets cook really fast.
- Once they are light brown, take out of the pan with tongs or a slotted spoon and drain on paper towels.
- Serve while warm with tartar sauce, hot sauce, or your favorite dipping sauce.
