Ingredients
- 6 medium cube steaks(about 2 lbs), cut into 1 1/2 inch squares
- 1 cup Buttermilk or 1 cup milk with 1 Tablespoon of Lemon Juice
- 2 Large eggs
- 1 1/2 Tablespoons of Hot Sauce
- 2 Tablespoons of parsley flakes
- 3 cups of flour (divided)
- 2 teaspoon Tony Chacheres Creole Seasoning
- 2 teaspoons of garlic salt
- 1 teaspoon of coarse black pepper
- 2 teaspoons of granulated garlic
- 2 teaspoons of onion power
- 2-3 cups of vegetable oil
Supplies
- Knife or Kitchen Shears – I like to use shears
- 3 Large Containers
- Whisk
- Measuring Cup and Measuring Spoons
- Frying Pan
Directions For Chicken Fried Steak Bites
- Add 2 cups to 3 cups of oil to a frying pan and heat to 375° degree Fahrenheit.
- Then cut cubed steaks into 1 1/2 inch squares, and place on a large plate or platter, lined with paper towels to soak up excess liquid. Be sure to flip the cubed steaks over to pat dry and absorb excess liquid.
- While the oil is heating up, add 1 1/2 cups of flour into a large container. Then add the remaining 1 1/2 cups of flour in another large container. To one of the containers with flour, add all the dry seasonings and stir with a fork to mix well.
- Next in a deep bowl, whisk the eggs, hot sauce and buttermilk together. If you do not have buttermilk, add 1 Tablespoon of lemon juice or vinegar to a measuring cup and then fill with milk. Then allow to stand for 5 minutes before using.
- Once you have your three containers ready and the oil is ready, place about 8-12 steak bites into the plain flour container, flipping to coat on both sides. Next add the bites to the egg mixture and last to the container with the flour and seasonings. Then place the bites in the hot frying pan.
- Fry until golden brown on both sides, which is about 3-4 minutes on each side.
- Remove from heat and drain on a plate lined with paper towels. So if you want to keep the chicken fried steak bites warm while cooking the rest, place on a baking sheet into a preheated oven at 175° degrees.
- Repeat the coating process for the remaining steak bites. So for best results, make sure to coat the steak bites right before going into the skillet.
