Chili Cheese Burritos

I like to make chili cheese burritos for Mexican food night and as quick meals for my active kids to heat up when they are hungry.  These are perfect on the weekends, when you don’t want to eat out and have limited time before you have to go somewhere else.  I make these chili cheese burritos ahead of time in a large batch and then freeze them in freezer bags. We just take 1-2 out when we are hungry and heat them in the microwave.  This recipe is perfect for busy families.  These also are great to take to work for lunch.

Mexican Chicken Enchiladas

Ingredients

Makes 24 Chili Cheese Burritos

  • 2 pounds of ground beef
  • 38.5 oz (2 lb 6.5 oz) 1.09kg can of chili (no beans).  If you can’t find this large can, you can use 2-3 cans of the smaller cans of chili that are 12-15 oz.
  • 3 cups of shredded cheddar cheese
  • 24 ct of burrito flour tortillas
  • 2 lb bag of tater tots (32 oz)
  • 4-5 chopped jalapeno’s (optional)
  • Vegetable oil – for frying the tater tots

 

Supplies

  • Large deep frying pan
  • Cooking utensils
  • Freezer bags
  • Can opener

 

Directions For Chili Cheese Burritos

  • Start by browning the ground beef and draining any oil with a strainer.

  • Open the can(s) of chili in a large bowl and add in the cooked ground beef.  Mix well.

  • Heat the chili mixture in the microwave for 6 minutes and then stir well.  Then allow the mixture to cool down for about 10 minutes.

  • Next, heat the frying pan with oil and heat to medium-high heat.  Then fry the Tatar tots and drain on paper towels on a plate.  Season with a little salt and then mash them flat.

  • While the chili is cooling down, chop up the jalapeño peppers to a small size.  Remove most of the seeds, so that they are not overly hot.

  • Now it is time to assemble the chili cheese burritos.  Place a few (3-5) Tatar tots at the end of the tortilla.  The number will depend on the size of the tortilla.

  • Then, top with chili, cheese and chopped jalapeños.  The jalapeño is optional, so I always make a few without.

  • You can add the Tatar tots on top instead of the bottom but they are harder to roll.

  • Then roll, starting at the end and folding in the sides and roll to form a tight burrito.  So if you are ready to eat, heat in the microwave for about 1 minute 20 seconds.  Then allow it to cool a few minutes before biting in or cheese and chili will go everywhere.
  • If you are freezing these, you can get 5-6 of them in a gallon freezer bag.  Then just label the bag with the date.  To re-heat, place  in the microwave covered and heat for 2 – 2 1/2 minutes total.  I like to flip it over after 1 1 /2 minutes, so that it is evenly heated.  They will store up to 3 months in the freezer without losing taste.
