Easy Fajitas
I love to make easy fajitas, whether they are chicken, beef or even just veggies. Fajitas are surprisingly very easy to make. The flavor is all in how you marinate them and to be careful to not over cook them. In this post, I will share how I make my chicken and beef fajitas. These never last long and also taste great when I re-heat them. I also like how few ingredients fajitas take. You can pretty much take whatever seasonings you have in the pantry and create a great marinade.

Ingredients
- 3 large chicken breasts or 2-2 1/2 lbs of fajita skirt steak
- 1/2 teaspoon of cumin
- 2 teaspoons of granulated garlic or garlic powder
- 2 Tablespoons of Worcestershire sauce
- 1/2 teaspoon of onion salt
- 1 teaspoon of coarse black pepper
- 1 teaspoon of Spanish style paprika
- 1/2 teaspoon of chili powder
- 1 1/2 teaspoons of cilantro flakes
- 3 large bell peppers (red, green, yellow or orange)
- 2 large yellow onions
- Olive oil
- 1 bunch of fresh cilantro (rinsed and pat dry)
- 1 package of regular flour tortillas
- 2 cups or one package of Shredded cheddar or Mexican cheese
- Guacamole – optional
- Sour cream – optional
- Your favorite salsa – optional
Supplies
- Sharp knife
- Cutting board
- Kitchen shears
- Indoor grill or stove grill
- Bowls for marinating the meat
- Tortilla skillet

Directions For Easy Fajitas
- Rinse off the meat in cold water and drain.
- Then slice the chicken and/or fajita beef into thin strips and set in a bowl. I like to slice up the meat with kitchen shears.
- Slice all of the veggies into strips with a sharp knife and set them to the side in bowls.
- Next, season the meat with all the seasonings and mix with your hands. Cover and allow to marinate in the seasonings for at least 2 hours in the refrigerator. You can do this the night before for even more flavor the next day.
- Cover the indoor grill or pan with olive oil and pre-heat the grill to 350 degrees Fahrenheit. This would be medium-high heat on the stove.
- Cook the meat 3/4 of the way through on medium-high heat if you are using the stove or 350 degrees Fahrenheit if using the indoor grill. This is about 5-6 minutes for chicken and 3-4 minutes for beef. Then remove the meat and set to the side. So, I like to cover the meat while I sauté the veggies, so the juices redistribute and the meat is juicy.
- Now sauté the veggies for 3-4 minutes or until desired tenderness.
- Then, add back in the meat and heat for another 2-3 minutes. Remove from heat and serve!
- Now, warm up the tortillas on the tortilla pan for about 3 minutes on each side on high heat. Serve the fajitas in warm tortillas and cheese. Add your favorites to them too, like cilantro, sour cream, guacamole, salsa, etc.
