Ground Turkey Enchiladas
These Ground Turkey Enchiladas are a family favorite. Ground Turkey Enchiladas are easy to make and kids love them. These are not the traditional enchiladas but are made with cream of mushroom soup mixed with enchilada sauce mix, onions and bell peppers. The ground turkey mix can be made ahead and stored separately.
My family assembles the enchilada when needed by adding a few spoonful’s in the tortilla, topping with salsa and cheese and microwaving 2-3 minutes when the cheese melts. That way the tortilla never gets soggy from leftovers.

Ground Turkey Enchiladas Ingredients
- 1 1/2 packets of Enchilada Sauce Mix – 1.5 oz
- 1 package of shredded Cheddar cheese or shredded Mexican Style cheese
- 2 – 2 1/2 pounds of ground turkey
- 1 package of regular size flour tortillas (8-12 count)
- 1 jar of salsa
- 2 cans of cream of mushroom soup -10.5 oz
- 1 green bell pepper
- 1 medium onion

- Large cooking pan
- Mini Chopper
- Knife Set
- Microwave Plate Cover
Directions
- Finely chop your onion and bell pepper and set aside. I use a mini chopper to chop my veggies so it is nice and quick.
2. Brown the ground turkey in a large skillet until the liquid evaporates. If you use ground beef instead of ground turkey, make sure you drain the oil from the pan.
3. Add in the green bell peppers and then the onions and cook through.
4. Once all liquid has evaporated, add in the cans of cream of mushroom soup and mix well.
5. Add in enchilada mix. Add in one full packet and then 1/2 of another packet. If you only are making with 1 lb – 1 1/2 pounds (one regular package) of ground turkey, use only one packet of enchilada mix and one can of cream of mushroom soup. Use half of the onion and bell pepper as well.
6. Mix well and reduce heat to low and simmer for 5 minutes. If sauce starts to stick to the pan, make sure your heat is reduced and add a little water to stop the sticking. After 5 minutes it is done. You can either store the meat mixture for later use or assemble your enchiladas.
Assembling the Ground Turkey Enchiladas
- On a regular flour tortilla, place two spoonfuls of ground turkey mixture in the center
- Add some shredded cheese (optional) – my kids like cheese on the inside too
- Roll up the tortilla and top with salsa and cheese. Sometimes we also add chives. You can also use enchilada sauce but we just use salsa. The kids like mild and I like medium.
- Heat in the microwave for 2-3 minutes or until the cheese has melted. You can also assemble a large group of enchiladas and bake on 375 degrees for about 10 minutes or until the cheese has melted. Once the meat mixture is made, you can make for lunch or at another time during the week. Pre-teens and teens can heat these up after school or when they are in a rush before activities.
Serve with Spanish Rice, beans, tortilla chips, guacamole, pico de gallo, sour cream, the options are endless!
