Sliced Potatoes and Onions

Sliced Potatoes and Onions

Sliced potatoes and onions make a great side dish or comforting treat for the family.  This recipe has few ingredients and is easy to make.  I love potatoes but I do not like to peel them.  I usually only want to go through the effort if they are medium sized or larger sized.  For cost efficiency I usually by my potatoes in the bags.  The downside is that there are usually several small potatoes in the bag.  A way I usually use my smaller potatoes that my family loves is with this easy recipe of sliced potatoes and onions.  I estimate 3 small potatoes per person in case you need to make for a larger family or want some leftovers.

  • Cover with aluminum foil and cook for 1 hour or until tender.

  • Bake uncovered another 5-10 minutes to get a little brown and crispy. I like my potatoes this way soft with crispiness on the top that I fold into the rest of the potatoes when done.  If you like a firmer potato, take out the over earlier.

If your family or kids do not like onions, I have made it before without the onions and it tastes great.
