Ground Turkey Shepherd’s Pie

Shepherds Pie

Ground Turkey Shepherd’s Pie is delicious.  It is truly comfort food but made with ground turkey.  I like to substitute traditional recipes that normally call for beef with ground turkey because it digests better.  I do not like to skimp on the flavor though, so adjusting spices is always fun.

This traditional comfort food is great for make ahead meals, dinner, potlucks and gatherings.  It seems to taste even better on cold or dreary days.  So I often make it in the fall and winter.  For kids, it is a great way to get veggies into the meal without them complaining.

Another great thing about this Shepherd’s pie recipe is that it is very easy to make.  It also freezes well.  Make this for others and bring it over for someone that is expecting, sick or elderly.  They will greatly appreciate this wholesome meal.

Ingredients

  • 2.5 lbs of lean ground turkey
  • Cooking oil spray
  • 1 large onion – chopped
  • 1 can of tomato paste 6oz (170g)
  • 32 ounce organic beef broth
  • 16 ounce (1 lb -454g) – frozen peas & carrots
  • 1 1/2 cups of frozen corn
  • 4 teaspoons of minced garlic or 4 garlic cloves minced
  • 2 Tablespoons of dried parsley leaves
  • 2 teaspoons of dried rosemary leaves
  • 3 Tablespoons of Worcestershire sauce
  • 2 teaspoons of dried thyme leaves
  • 2 teaspoons of garlic salt
  • 1/2 teaspoon of dried mint leaves
  • 2 1/2 teaspoons of coarse black pepper
  • 2 Tablespoons of granulated garlic
  • 4 Tablespoons of All Purpose flour

Potato Topping

  • 10-12 large potatoes (Russet or Gold)
  • 3/4 cup of milk or heavy cream
  • 1 1/2 sticks of butter
  • 1 teaspoon of salt and pepper or to taste
  • 2 cups of shredded parmesan cheese

Supplies

  • Large cooking skillet
  • Mini chopper
  • Sharp knife
  • Cutting Board
  • Potato Peeler
  • Strainer
  • Large Stock Pot
  • Potato Masher
  • Measuring Cup
  • Measuring Spoons
  • Large Baking Pan
  • Cooking Utensils
  • Cookie Sheet (optional)

 

Directions For Ground Turkey Shepherd’s Pie

  • Pre-heat the oven to 400 degrees Fahrenheit.
  • Finely chop onion.
  • In a large skillet, brown ground turkey and finely chopped onion on medium-high heat for about 5 minutes.

  • Then add in the minced garlic and continue cooking for another minute.
  • Next add in the seasonings – parsley, thyme, rosemary, garlic salt, pepper, Worcestershire, granulated garlic, and mint.
  • Add in the tomato paste, beef broth first and mix.  Then add in the flour and mix well.  Continue cooking on medium heat and simmer for 6 minutes.

  • Mix in the frozen peas & carrots.

  • Last, add in the frozen corn and simmer for another 10 minutes on medium heat or until corn and frozen peas & carrots have cooked.  Then turn off the stove and allow to cool while you are making the mashed potatoes.

  • In a large stockpot, fill half of the pot with water and turn on the stove to high heat.
  • So while the pot of water is heating, peel the potatoes and roughly chop.

  • Add chopped potatoes to pot of water and bring to a boil.  Boil potatoes for about 10-15 minutes or until tender with fork.
  • Drain potatoes with strainer and return to the pot.  Then add in the butter, milk, salt and pepper.  I also like to add a little granulated garlic (about 1 1/2 teaspoons).  Then mash with the potato masher and stir until smooth.  Feel free to add more salt and pepper to taste.  If potatoes are a little thick, add more milk 1/4 of a cup at a time until you like the consistency.

  • Next add in the shredded parmesan cheese and mix until well combined.
  • Layer the baking dish with the meat mixture and then top with the potato mixture.  Then top with dried parsley flakes (optional).

  • Bake Shepherd’s pie uncovered for 25 minutes or until lightly brown on the top.  Allow to cool for at least 30 minutes so when you cut into it, it will cut into squares.  If everyone is super hungry, just scoop it up and enjoy before then.

Freezing and Storing Shepherd’s Pie

You can make Shepherd’s Pie ahead the day before baking or freeze for 2-3 months.  To freeze, just cover baking dish with clear plastic wrap and then with heavy duty foil.

Then when you are ready to bake, take out of the freezer, remove the plastic wrap and let it sit on the counter for 2 hours.  Next, bake it for 30 minutes covered with foil.  Then remove the foil and allow to brown for 7 minutes.  Allow to cool before serving as instructed above.  Enjoy!
