Lady Cowper Cucumber Tea Sandwiches

Lady Cowper Cucumber Tea Sandwiches are inspired by the Bridgerton TV series on Netflix. They are great tea party sandwiches for any tea party or Regency Era themed event. Cucumber sandwiches are a tea party classic. They are very easy to make and are surprisingly delicious and refreshing. I love that you do not need any cooking skills to make these sandwiches. So if you are new to making any food, this recipe is perfect for you.

The cream cheese mixture gets its flavor from the dill and chives and is delicious and creamy. You can also double or triple this recipe, depending on the size of the party or event. So, I like the sandwiches to chill for a little while before serving, or you can serve them immediately. I also like to embellish the top with a little dollop of the cream cheese mixture and topped with a half cucumber slice.

Ingredients

8 ounces (225g) cream cheese softened
¼ cup mayonnaise
1 tablespoon chopped fresh dill
1 tablespoon chopped fresh chives
¼ teaspoon garlic powder
½ teaspoon salt
¼ teaspoon coarse ground black pepper
1 loaf (about 1 pound) white sandwich bread
2-3 firm cucumbers or thin shaped regular cucumbers, sliced crosswise into ⅛ inch slices using a mandoline or with a sharp knife. 1 cucumber makes 12 mini sandwiches (uses 6 slices of bread)

Sharp knife or mandoline slicer
Cutting board
Spreader knife
Mixing bowl

Instructions

Start by slicing cucumbers very thin. So to ensure the same size slices, use a mandoline slicer or vegetable slicer.

Next, finely chop the dill and chives.
In a bowl, combine cream cheese with mayonnaise, dill, chives, garlic powder, salt and pepper. Mix until well combined and set aside.

Lay the bread pieces out in a single layer, then spread the cream cheese mixture all over the bread (both sides).

Layer the sliced cucumbers over half of the bread slices, then top the sandwiches with the other slices of bread. So I added some additional coarse black pepper for more flavor.

Next, cut off the crusts and then slice each sandwich into thirds.

You can make ahead and refrigerate up to 5 hours ahead or serve immediately. I like to chill the sandwiches for at least 2 hours before serving. Enjoy!
