Onion Rings
These beer batter onion rings will melt in your mouth. They are crispy, flavorful and taste like the ones at a restaurant. These are perfect with fried seafood, burgers, sandwiches, wraps, or just about anything. Onion rings are a comfort food. They also are a break from French fries. I make my onion rings with beer but you could also substitute club soda instead.
I find that I am cooking more things at home these days, due to the rising costs of eating out. I also like that I know everything that is going into my food. So cooking more at home has been so much fun with my family. The important thing to remember when cooking onion rings, is to not overcrowd the pan. The onion rings will stick together if you do not give them enough room, and you will have raw batter where they overlapped. So take your time, have fun cooking, and enjoy them nice and warm.

Ingredients
- 2 extra large yellow onions
- 2 cans or bottle of cold beer
- 3 Tablespoons of powdered sugar
- 2 cups of all purpose flour
- 2 teaspoons of baking powder
- 1 1/2 teaspoons of corn starch
- 2 teaspoons of Spanish style paprika
- 1/2 teaspoon of granulated garlic or garlic powder
- 1 teaspoon of salt
- 1 teaspoon of ground pepper or white ground pepper
- Vegetable oil for frying
Supplies
- Frying pan or deep fryer
- Mixing Bowls
- 2-3 wire racks
- Long tongs
- Whisk
- Cutting board
- Sharp knife
- Paper towels
Directions For Onion Rings
- In a large mixing bowl, add the flour (2 cups), powdered sugar (3TBSP), cornstarch (1 1/2 tsp), paprika (2 tsp), granulated garlic (1/2 tsp), baking powder (2 tsp), salt (1 tsp) and pepper (1 tsp) and then mix with the whisk.
- Next, cut up the extra large onions in 1/2 inch slices and then separate the rings. Discard the outer shell and end pieces.
- Then coat the onion rings in the flour mixture and set to the side.
- Pre-heat the frying pan with about 1 1/2- 2 inches of oil on high heat until it is hot enough to deep fry. So the temperature of the oil should be between 350-375 degrees Fahrenheit.
- Once the oil is heated, add the beer to the flour mixture and whisk until combined. So do not over whisk your batter or the bubbles will burst. Then dip the onion rings into the batter and then one by one into the hot pan. Do not overcrowd or overlap the onion rings or they will not cook properly.
- The onion rings cook rather quickly, so dip some of the onions into the batter and have them ready on a wire rack.
- Fry until a light golden brown, this is about 1 1/2 -2 minutes on each side. Then drain the cooked rings on a wire rack over some paper towels.
- They are done! Serve them with your favorite dip, sauce, ketchup or eat them just as they are. These taste the best served warm, so make your other dishes first, since these cook so fast. Enjoy!
