Quidditch Queso Dip
Quidditch Queso Dip is so easy to make. It is the perfect dip for a Harry Potter themed party or event. I love how you just cut up the cheese, place the other ingredients in the crock pot and it soon is ready. You can also control the spice level of the dip by adding more peppers. This dip is made with white cheeses but you can mix it up it you are unable to find white cheese. So you don’t have to be a great cook, you just have to be able to cut things up and turn on a crock pot.

Ingredients
If you are making for home and not for a party, half all of the ingredients, unless you have teenagers because they will eat it all.
- 32 ounce white pasteurized cheese product (like Velveta) or white American cheese
- 10 ounce can of diced tomatoes and green chilis (like Rotel original)
- 2 cans of 4 ounce can of diced green chilis (I used medium)
- 1 chopped red bell pepper (optional but adds great color to the dip)
- 8 ounce block of cream cheese
- 1 can of evaporated canned milk or 2 cups of whole milk
- 16 ounce block of Monterey Jack with jalapeño peppers
- 2-3 chopped freshJalapeños or 3 Tablespoons of canned or jarred (add 5-6 peppers with the seeds for a spicier dip)

Supplies
- Large crock pot
- Can opener
- Sharp knife
- Cutting board
- Large mixing spoon

Directions for Quidditch Queso
- Start by slicing the processed cheese into large chunks and place in the crock pot.
- Then, slice the Monterey Jack cheese and cream cheese and place in the crock pot. Also, add in the milk.
- Now, add in the diced tomatoes and chilis. Then the chopped jalapeños and red bell pepper if desired.
- Place all ingredients in a large crock pot and cook on low for 4-5 hours. Make sure to stir every hour to make sure nothing is sticking and burning on the sides. So the queso is ready when all the cheese is melted and there are no lumps. Then serve while warm and with your favorite tortilla chips or over a burrito. This is an excellent cheese sauce to go over some of your favorite Mexican dishes.
- Store in the fridge for up to 5 days in an air tight container.
