Roasted Cornish Game Hens
Roasted Cornish Game Hens are a perfect dinner treat. They are perfect for a special dinner, date night, Mother’s Day or any occasion. I like roasted Cornish game hens because they are served by person. Each person gets to eat their favorite parts of the small bird. So when you are purchasing these small birds, purchase one per person.
I like to bake these in a baking dish or deep baking sheet, so the dish is deep enough to catch all the juices if it spills out of the foil. Lightly covering the hens with foil, ensures the meat will remain tender and moist. But one of the most important steps is to allow the Cornish game hens to rest after they are done. This allows the juices to redistribute and the moisture to retain in the birds before eating.
This recipe is easy to adapt to the number of people you are serving. If you are just making for two people, you will only need half of an onion. So if you are making for six people, just know you need a quarter of an onion for each bird. Then just buy what you need. So small kids can share one bird. Just pull off the meat to ensure they don’t get any bones.

Ingredients
Serving Size: 4
- 4 Cornish game hens (no giblets inside like Tyson)
- 1 stick of softened butter
- 1 onion (quartered)
- Olive oil
- Seasonings
- Salt
- Coarse Black Pepper
- Adobo Seasoning
- Spanish Style Paprika
- Tony Chacheres Creole Seasoning
- Dried Parsley Flakes
Supplies
- Baking Dish or Baking Sheet
- Cutting Board
- Sharp Knife
- Heavy Duty Foil
Directions For Roasted Cornish Game Hens
- Pre-heat oven to 400 degrees Fahrenheit.
- Then line a baking dish or baking sheet with heavy duty foil and make sure you have enough to fully wrap the game hens.
- Next, rinse off Cornish game hens and then place the hens on the foil.
- Place some olive oil on your hands and rub all around the Cornish game hens.
- Then, cut the softened butter into small pieces and then place in cavity and under the skin, especially around the breast area. Just gently lift the skin with your fingers and place the pieces of the butter under the skin.
- Now, sprinkle the seasonings all over the bird, including the inside of the birds. So I like to start on the backside, so that it is nice looking with seeing the seasonings once it is done.
- Next, cut the onion into quarters and then place one quarter into each of the hens.
- Lightly cover the bird with the foil and bake for 40 minutes lightly covered, so it does not dry out during baking.
- Then reduce the heat to 350 degrees Fahrenheit and bake for another 50 minutes.
- Once it is done, allow the roasted Cornish game hens to rest for at least 10 minutes so that the juices redistribute and the hens are perfectly moist.
- Serve with your favorite sides like potato dishes, rice dishes, veggies and salad.
