Meatloaf

It is hard to find a good savory meatloaf recipe that everyone enjoys but when you do, it is a great comfort food.  Meatloaf is really easy to make and just requires your hands to get a little dirty.  Savory Meatloaf should be moist but firm when you put your fork into it.

It tastes great with mashed potatoes or au gratin potatoes or green beans.  Meatloaf is perfect for bringing to the office for lunch.  I like to eat meatloaf sandwiches the next day.  Some people like to add ketchup for even more tomato flavor.  However you like to eat meatloaf, this recipe will not disappoint.

You can substitute ground beef with ground turkey or mix the meats.  The result is a savory meatloaf that is a little more dry but still delicious.

Ingredients

  • 1 1/2 pounds of Lean Ground Beef
  • 1 – 15 ounce (425g) can of Tomato Sauce (divided) -1/2 the can in the meatloaf mixture and the rest to cover the top
  • One envelope/package of Lipton Onion Soup Mix (2.0 oz – 56.7g)
  • 1 1/2  – 2 cups of Italian Bread Crumbs  (for a firmer meatloaf, add 2 cups)
  • 2 eggs
  • 1 medium onion (finely chopped)
  • 1 bunch of fresh curled parsley (washed and finely chopped)
  • Seasonings
    • 1 teaspoon of coarse black pepper
    • 1 teaspoon of granulated garlic or garlic powder
    • 2 teaspoons of Worcestershire sauce
    • Dried parsley flakes (optional)

 

Supplies

  • Loaf Pan
  • Food Chopper
  • Large Mixing Bowl
  • Measuring Cup and Measuring Spoons
  • Can Opener
  • Foil

 

Directions For Savory Meatloaf

  • Pre-heat oven to 350 degrees Fahrenheit.
  • In a large mixing bowl, crumble the ground beef.
  • Chop the onion fine in the food chopper and add to the mixing bowl.

  • Then rinse off the curled parsley well and pat dry on paper towels. Now, break off the tops of the parsley and chop in the food processor.
  • Next add in the Lipton Onion soup mix, seasonings, and then the bread crumbs.

  • Add the eggs, 1/2 the can of tomato sauce, and chopped parsley.

  • With your hands, mash and combine the meatloaf and form into an oblong ball that you will press into the loaf pan.
  • Once the meatloaf is pressed into the pan, cover the top with tomato sauce and sprinkle with additional parsley or dried parsley flakes (parsley is optional).

  • Cover the meatloaf with foil and bake for 1 hour.  Then take off the foil and bake for another 10 minutes or until meatloaf is cooked.  Ovens vary but do not cook for over 1 1/2 hours.
  • Allow to cool for at least 20 minutes before serving or meatloaf will not slice well.
