Seasoned Okra Medley

Seasoned Okra Medley is very easy to make and it is packed with flavor. This side dish cooks in less than 15 minutes. It is also a one pot dish. Seasoned Okra Medley gets the spice from the Rotel without it being too spicy or overwhelming the okra flavor. I also like that this dish is not slimy as some okra dishes can be. Most of the ingredients are frozen, so they cook well without deteriorating. So give this recipe a try and enjoy a nice twist on okra.

Ingredients
- 8 ounce package of frozen whole okra
- 32 ounce package of frozen cut okra
- 1 can-10 ounce (283g) Total Original Diced Tomatoes & Green chilis
- 2 cups of frozen sweet corn
- 5 Tablespoons of butter
- 1 teaspoon of granulated garlic
- 1 teaspoon of Tony Chacheres Creole Seasoning
- 1/2 teaspoon of garlic salt

Directions For Seasoned Okra Medley
- Add the frozen okra, frozen corn, diced tomatoes, granulated garlic, butter, Tony Chachere’s Creole seasoning, garlic salt and coarse black pepper to a large stock pot. Then heat on medium heat, stir everything with a large spoon.

- Cook on medium high heat for 8-10 minutes or if you like your okra softer, up to 15 minutes. Taste the okra and determine if you want to add more seasonings, then season to taste. It is ready to serve! Enjoy!

What if it is for two people only,what would ingredients be
For two people I would reduce all ingredients in half. If you still have leftovers, you could freeze them or eat a few days later in the same week. I usually make the recipe just for me and it lasts a few days but I love okra. Thanks for reaching out and I hope you like it. – Elena
