Strawberry Poke Cake

Strawberry Poke Cake is one of the easiest cakes to make.  It tastes delicious and you don’t need any decorating skills to pull off this flavorful dessert.  This cake is moist and stays in the baking pan.  It is a chilled cake, so it great in the summer.  It is perfect for potlucks, barbecues, pool parties, park gatherings, Memorial Day, 4th of July, and sporting event gatherings.  This is also a very budget friendly cake.  It has few ingredients required.

When making poke cakes, they can be made in any flavor that Jello comes in.  You can also make with yellow or white cake mix.  Also, you can make in two round pans and make each layer in a different color, then use all the extra jello by adding cold water and making traditional Jello.  The possibilities for decorating the poke cake are endless as well.  I like it plain and sometimes I add fresh fruit.  But you could also decorate with a cake topper, sprinkles, or candy.

This is a traditional recipe that I grew up on and it will not last long.  People love the flavor and the moistness of the cake.  It is really a wonderful easy cake to enjoy.

Ingredients

  • 1 box vanilla or yellow cake mix and ingredients listed on cake mix (eggs, water, oil)
  • 6oz box of strawberry Jello (needs 2 cups of water)
  • 3.4 oz box of French vanilla instant pudding (needs 2 cups of cold milk)
  • 16 oz of whipped topping (like Cool Whip) – softened

Supplies

  • 9×13 inch baking pan
  • ice pick or dowel
  • Hand mixer
  • Spatula
  • Large mixing bowl
  • Saucepan
  • Spoon or whisk

Directions For Strawberry Poke Cake

  • Bake cake mix as per package directions.  Allow cake to fully cool (at least 30 minutes) and then poke holes in the cake with an ice pick or dowel and a fork.  For deepened color from the Jello, use a dowel or ice pick.  So I made a few large holes with an ice pick and smaller holes with the fork.

  • Next, in a saucepan, bring 2 cups of water to a boil and then add the Jello mix and whisk on low heat until dissolved. Do not add the cold water as mentioned on the box.   Then once the Jello mixture has dissolved, allow it to cool for about 3 minutes or until the bubbles reduce.  Now, spoon over the baked cake while the liquid is still warm.  It is fine that you do not use all of the Jello.  I usually use 3/4 of the pot.

  • Make pudding as per package directions.  Mix with 2 cups of cold milk with a whisk for at least 2 minutes and place in the refrigerator.  Pudding will soft set in 5 minutes.  So once the pudding stiffens, spread over the cake with a spatula.  Then refrigerate for 45 minutes.

  • Last, spread on the softened cool whip.  Then cover with plastic wrap or pan cover and chill for at least 2 hours.  It is ready!  You can also add fresh fruit to the top.  I like this in strawberry, raspberry, and blueberry flavor.  But you can make with any Jello flavor that you like.
