Warm Spinach and Artichoke Dip

Warm Spinach and Artichoke Dip is one of the best dips to make.  It is flavorful and creamy.  It tastes great with warm breads like focaccia, artisan, French, and pita.  Also, with a variety of chips.  You can also serve as a side to other dishes.  The white cheese blend adds to the flavor nodes.  So don’t be afraid to get a cheese blend of cheeses that you may not be familiar with.  The blend I used had Asiago, Romano and Parmesan, and it really enhances the flavor.

This dip can be made ahead and stored in the fridge or freezer.  You can also make the dip as creamy or cheesy as you like.  Just be careful with the salt because the cheese will already add the salt.  This is great to make for dinner, larger family gatherings, dinner parties, and large parties and events.  Serve it warm and watch it disappear.

Ingredients

  • 16 oz (1 pound) bag of whole leaf frozen spinach
  • 14 oz can of quartered artichoke hearts (396g)
  • 1 block (8 oz) of original cream cheese (226g) – softened to room temperature
  • 3/4 cup of heavy cream (for a creamier dip, add more heavy cream)
  • 1 1/2 cups of chopped onion (yellow, white or red)
  • 1 cup of sour cream
  • 2 Tablespoons of butter
  • 1 cup of white Italian cheese blend (Asiago, Parmesan and Romano)
  • 2 teaspoons of granulated garlic
  • 2 teaspoons of coarse black pepper
  • 1 teaspoon of garlic salt

Directions For Warm Spinach and Artichoke Dip

  • Pre-heat the oven to 360 degrees Fahrenheit.
  • Cook spinach in a stock pot with about an inch of water.  Then drain the spinach with a strainer and add to the baking dish.

  • Next, drain the liquid from the can of artichokes and then roughly chop and add to the baking dish.

  • Then, sauté the onions in a small frying pan with the butter on medium heat until onions are soft and then add to the baking dish.

  • Now add in the sour cream, softened cream cheese, seasonings, and cheese blend.  Mix everything together with a spatula or spoon.

  • Then add is the heavy cream and mix again.

  • Bake uncovered on a low rack in the oven for 30-40 minutes or until cheese is melted.

  • Serve with warm bread or crackers.  This dip is also great as a side or on top of a baked potato.  Enjoy!
