Best Fried Rice
As most of us are learning how to cook more meals these days at home, I finally mastered fried rice that is better than take out. The best part is that I am able to add the amount of chicken and shrimp to satisfy everyone in my house. This is the best fried rice that has my favorite ingredients. I also like that it was very easy to make.
The difference that made this fried rice the best was using Jasmine Rice and the perfect amount of eggs. I also used Jumbo Shrimp which was ever so delicious. With the chicken and shrimp, this was a fulling meal all by itself. The recipe calls for just a little soy sauce but you could always add more to suite your tastes. I hope you enjoy making this easy fried rice! It also reheats really well.

Ingredients For Best Fried Rice
- 4 cups of cooked Jasmine Rice (cook according to package)
- 3 Chicken Breasts, cooked and cut into bit sized pieces
- 1 pound of Jumbo Cooked Shrimp – shelled and deveined
- 4 large Eggs
- 1 large White or Yellow Onion (roughly chopped)
- 4 Tablespoons of Sesame Oil
- 1/2 cup of Lite Soy Sauce
- 16 ounce bag of frozen Peas & Carrots
- 2 teaspoons of Minced Garlic or 2 cloves of Garlic,minced
- Seasoning for chicken: Garlic Powder, Pepper, Salt – lightly shake on chicken

- Knife
- Cutting Board
- Large/Deep cooking pan or wok
- Spatula
Directions For Best Fried Rice
- Bake chicken breasts in oven for 30-35 minutes on 350 degrees Fahrenheit. I recommend baking chicken lightly seasoned and wrapped in foil. Allow chicken to fully cool and then chop into bit sized pieces. You can also use a Rotisserie chicken purchased at your local store.
- Remove shells and veins from shrimp and rinse in a ice bath of 3 cups of water and 1 teaspoon of lemon juice. Then rinse the shrimp again in cold water. Next, place shrimp in a bowl and place in fridge until you are ready to cook. If the shrimp is already cooked, peeled and deveined, then just rinse, drain and place in the fridge until adding to the rice.
- Prepare Jasmine rice according to package instructions to yield 4 cups of cooked rice. Do not overcook the rice. I like this rice the best for fried rice but other rice can be used.
- Heat sesame oil in a large skillet or wok on medium high heat. Then add the onion, garlic, frozen peas and carrots. Stir fry the veggies until tender.
- If you are using raw shrimp, add them now and cook them for 3-4 minutes. If you are using already cooked shrimp, add them last.
- Next add the eggs to the pan and scramble, lightly mixing throughout the vegetables. So if you lightly mix, the egg pieces will be larger.
- Now add in the rice and mix well. Then add in the chicken and shrimp if you have not done so already.
- Last, add in the soy sauce and combine all ingredients.
- Remove the fried rice from heat and enjoy!
