Garlic Mashed Potatoes
Homemade garlic mashed potatoes not only taste delicious but also provide comfort and health benefits. This garlic mashed potatoes recipe includes roasted garlic and gold potatoes. This recipe is one of my favorites to make because it is so easy. The few ingredients required for garlic mashed potatoes make it a go to recipe in the winter time. Because you are using roasted garlic, it also helps with colds and immunity. Serve it up with pot roast or Salisbury steak and you your favorite veggies. These potatoes also taste great with baked or roasted chicken.
When determining how many potatoes you will need, aim for 3 small potatoes per person or 2 medium potatoes per person. I use the small potatoes that are remaining from the large bags of potatoes that I buy. I used 15 small potatoes and 2 medium sized russet potatoes for the recipe and we had some for leftovers a few times during the week.

Ingredients
- 15 – Small to medium gold or yellow potatoes (base the number of small potatoes to the number of people you are feeding. Estimate 3 small potatoes per person).
- 2 large Russet potatoes (these have more starch and make the mashed potatoes hold better)
- 2 large heads of garlic – roasted and chopped
- Olive Oil (about 2 Tablespoons)
- 1 1/2 sticks of Butter
- Salt
- White Pepper
- Water
Supplies for Garlic Mashed Potatoes
- Large Cooking Pot
- Potato Masher
- Foil
- Small Roasting Pan
- Strainer
- Cutting Board
- Knife
Roasting The Garlic For The Garlic Mashed Potatoes
- Pre-heat the oven to 400 degrees Fahrenheit.
- Line a small baking pan with regular foil.
- Chop off the top of the head of garlic and peel away the excess peel.
- Pour some Olive Oil over the tops of the garlic heads.
- Cover garlic with foil.
- Bake in oven for 40 minutes.
- Allow to cool.
- Squeeze the roasted garlic out of the pods and set to the side.
Directions For Garlic Mashed Potatoes
- Peel potatoes and wash off. Set to the side.
- Chop potatoes in equal parts so that they cook evenly and to the same texture.
- Drain potatoes in a strainer and return to pot.
- Using a potato masher or other type of masher, mash the potatoes but do not over mash. Should be slightly lumpy.
- Add in butter by slicing.
- Next, add the chopped garlic and mix.
- Season with salt and white pepper to taste. Add chopped parsley for color (optional).
- It is ready to serve! Serve with your favorite gravy or on its own.
