Sliced Potatoes and Onions
Sliced potatoes and onions make a great side dish or comforting treat for the family. This recipe has few ingredients and is easy to make. I love potatoes but I do not like to peel them. I usually only want to go through the effort if they are medium sized or larger sized. For cost efficiency I usually by my potatoes in the bags. The downside is that there are usually several small potatoes in the bag. A way I usually use my smaller potatoes that my family loves is with this easy recipe of sliced potatoes and onions. I estimate 3 small potatoes per person in case you need to make for a larger family or want some leftovers.

Sliced Potatoes and Onions Ingredients
- 12-13 small gold potatoes – sliced thin and around the same size for even cooking
- 1 medium yellow onion – sliced thinly
- Cooking Spray
- Salt
- Coarse Pepper
- Garlic Powder or granulated garlic
- 1 stick of cold Butter
Kitchen Supplies
- Regular foil
- Baking Dish
- Knife
- Cutting Board
Directions for Sliced Potatoes and Onions
- Preheat Oven to 400 degrees F
- Peel the potatoes and slice thinly.
- Spray bottom of baking dish with cooking spray.
- Sprinkle little bit of salt, pepper and garlic powder or granulated garlic in the bottom of the baking dish.
- Place a layer of potatoes in the baking dish.
- Sporadically add some sliced onions.
- Slice thin slices of cold butter and add to baking dish throughout.
- Sprinkle a little bit more of salt, pepper and garlic powder or granulated garlic.
- Add another layer of potatoes, then onions, butter slices and then seasonings.
- Cover with aluminum foil and cook for 1 hour or until tender.
- Bake uncovered another 5-10 minutes to get a little brown and crispy. I like my potatoes this way soft with crispiness on the top that I fold into the rest of the potatoes when done. If you like a firmer potato, take out the over earlier.
If your family or kids do not like onions, I have made it before without the onions and it tastes great.
