Shrimp Tacos

Shrimp Tacos are one of my favorite meals.  They are great for lunch or dinner.  I like them because they are light, refreshing and easy to digest.  So you get to be full, without overloading your body.  Shrimp tacos are great with sauce or without.  I like fish tacos with feta cheese, but try with other kind of cheeses as well.  A good coleslaw salad mix tops these tacos perfectly.

In this post I will be explaining how to make a seasoned shrimp that is cooked perfectly.  So when you are cooking the shrimp, be careful not to overcook.  After the cleaning of shrimp, they are really easy to cook and cook fast.  Also, consider making these shrimp on the grill.

Best Fried Rice

 

Supplies

  • Air tight container with lid
  • Large bowl
  • Sharp pairing knife
  • Measuring spoons
  • Frying pan or stove top grilling pan
  • Flat griddle pan

 

Ingredients

  • 1 1/2 – 2 pounds of extra large or jumbo shrimp
  •  2 limes
  • 2 Tablespoons of olive oil
  • 1/2 stick of butter
  • 1 Tablespoon of garlic powder or granulated garlic
  • 1 teaspoon of Spanish style paprika
  • 2 teaspoons of lemon pepper seasoning
  • 1 1/2 teaspoons of creole seasoning (like Zataran’s)
  • 1 1/2 Tablespoons of dried parsley flakes
  • 6 ounces of crumbled feta cheese
  • 1 (9oz – 255g) package of coleslaw mix
  • 1 bunch of fresh cilantro (chopped)
  • 20-30 pack of White corn or flour tortillas – shelf or refrigerated (taco size)
  • Tartar sauce or your favorite creamy taco sauce – I like Wow Wee sauce

 

Directions For Shrimp Tacos

  • Start by cleaning the shrimp well.  A lot of people do not like this step but it is essential to happy eating.  Remove the shell and the tail carefully.  The top of the shrimp contains the waste line.  This is most important thing to remove with a pairing knife.  The underside contains a vein as well, and I like to remove this as well.  So depending on how many pounds you purchased, is why cleaning the shrimp may take some time.

  • Next, as you clean the shrimp, place them in an ice bath filled with water and 1 Tablespoon of lime or lemon juice.  This can be squeezed from the fruit or in the bottle.

  • Season the shrimp with the olive oil, seasonings and squeeze half a lime on the shrimp.  Allow to marinate in the fridge for at least one hour.

  • Next, melt the butter in the pan on medium high heat.  Then add in the shrimp with the marinade and cook just until the shrimp curl into a circle.  The shrimp should cook in 4-5 minutes.  So make sure you flip them over in about 2 minutes for even cooking.  Remove from heat immediately and put in a container and close the lid.  This will not only keep the shrimp warm, but allow it to stay moist before serving.

  • While your shrimp are resting, warm up the tortillas on a flat grill pan or for about 10 seconds in the microwave covered by a moist paper towel.
  • You are now ready to assemble the tacos.  Place 4-5 shrimp into the tortilla and add the cheese, coleslaw, favorite sauce and top with fresh cilantro.
