Spicy Fried Chicken

If you like or need a little spice in your life, try some Spicy Fried Chicken.  This chicken has the kick you are looking for because it is marinated overnight in spices and hot sauce.

To make sure your Spicy Fried Chicken ends up crispy, frying at the right temperature is key.  So I use a candy thermometer every time I fry things.  The deep fry marker makes it easy to make sure the temperature is right for frying every time.

Ingredients

  • 9-12 pieces of Chicken (Thighs, Legs or Wings) – I usually make all thighs.  The chicken can be skinless or with the skin.
  • 2 cups of Hot Sauce –  or enough to cover the chicken.  So if you make a large batch of chicken you will need more hot sauce.  Then if you are only making a few pieces, just cover the chicken.  The same goes with seasoning the chicken.
  • 4- 6 cups of Frying Oil – Frying, Vegetable, Canola or Peanut.  Fryers have a fill line, so pour the oil up to the fill line.  The amount of oil you need, depends on your deep fryer.  So if you are frying in a deep skillet, 4 cups should be enough.
  • 3 Large Eggs
  • 4 cups of All Purpose Flour
  • Seasonings:  For the seasonings, you want to season the chicken for marinating and then add some of the seasonings to the flour.  So after you rinse the chicken, cover each of the chicken pieces with the seasonings below.  Shake a little seasoning and then turn the chicken over and shake more seasoning.
    • Cayenne Pepper
    • Spanish Style Paprika
    • Garlic Powder or Granulated Garlic
    • Adobo All Purpose Seasoning
    • Seasoning Salt
    • Parsley Flakes (Optional)
    • Cumin – add to the flour only

 

Supplies

  • Large container or bowl with lid
  • Medium sized bowl
  • Small bowl
  • Deep Fryer
  • Candy Thermometer
  • Tongs
  • Paper Towels
  • Large Plate to drain chicken

 

Directions For Spicy Fried Chicken

  • Rinse chicken in cold water and set in large container or bowl.
  • Then season chicken with Cayenne Pepper, Spanish Style Paprika, Garlic Powder or Granulated Garlic, Adobo All Purpose Seasoning, Seasoning Salt and Parsley Flakes (Optional).  So shake the seasonings on both sides of chicken.
  • Cover chicken with Hot Sauce and refrigerate 6 hours or overnight.

  • Pre-heat the fryer to 380 degrees Fahrenheit.  For years, I would mess up fried chicken until I started using a candy thermometer to make sure the oil is heated to the right temperature.  Many thermometers have a Deep Fry marker.
  • Next, beat the eggs in a small bowl with a fork and add a Tablespoon of water.
  • In a medium sized bowl or container, add 4 cups of flour.  So if you are making larger batches of chicken or smaller amounts of chicken add or subtract flour by 2 cups.
  • Then add the following seasonings to the flour:  1 Tablespoon of Granulated Garlic or Garlic Powder, 1 teaspoon of Cayenne Pepper, 2 teaspoons of Adobo Seasoning, 1 teaspoon of Cumin and mix well.  This quantity is based on 4 cups of flour.  So increase if you are making larger batches of chicken.  For small batches (2 cups of flour), then half the quantities.

  • Next dip the chicken in the egg, then the flour and place the chicken in the fryer basket
  • Fry chicken for 14 minutes at 380 degrees.  The heat will decrease once you add the chicken, so turn your fryer temperature to 400 degrees.  So the thermometer will tell you the true temperature of the oil.

  • Once the fried chicken is cooked to a light crispy brown, then drain the excess oil from the basket.
  • Next remove the chicken from the fryer basket and drain on paper towels.

Serve the spicy fried chicken with your favorite sides.  These also taste great on sandwiches.  So if you need to re-heat the fried chicken, place in a cold oven, then turn it on and heat until oven heats up to 350 degrees Fahrenheit.  Chicken is warm and crispy again!
